Kangaroo is the leanest red meat on this continent, and almost nobody in Australia is doing anything serious with it.

Wild-harvested Australian kangaroo, naturally woodsmoked over real wood, marinated by hand, and made by a family that’s been curing meat at the Fremantle Markets since 2010.

What kangaroo jerky tastes like

Rich, clean, and a little gamey — closer to a good rare steak than to a supermarket beef jerky. There’s iron in it and you can taste it, in the way you can taste it in venison, but without the heaviness.

The woodsmoke is what pulls it together. We smoke slowly over real wood rather than spraying on smoke flavouring, so the smoke sits behind the meat instead of on top of it. The marinade is there to bring the kangaroo forward, not to hide it.

If you eat your steak rare, you will like this immediately. If you’re nervous about game meat, this is the gentlest possible introduction to it.

Why kangaroo

It’s wild. Kangaroo is not farmed. It’s sustainably wild-harvested — no feedlots, no pens, no grain finishing, no farming inputs at all. The animal has spent its life running across open country. That’s not a marketing story, it’s just how the meat gets made.

It’s exceptionally lean. Less than 2% fat. High in protein, high in zinc, rich in B vitamins and omega-3s, and with double the iron of beef. It’s one of the few meats where “lean” isn’t the result of someone trimming it down — it just is.

It’s ours. Kangaroo is Australian in a way almost nothing else on a shelf is. We’re a Western Australian family business and we’d rather sell you something from here than something from a container.
