Karutz has been family-owned since 2005 and at the Fremantle Markets since 2010. We came up through German charcuterie, but we’ve never been precious about staying inside it — Spanish chorizo, chilli-coated burners, venison chorizo. If it’s cured and it’s good, we’ll make it.

The range

• Spanish Chorizo (twin pack) — $16. Smoked paprika, properly. Fry it, or eat it as it comes.
• Artisan Game Venison Chorizo 400g — $23. Chorizo technique, Australian venison. Leaner and deeper than the pork.
• Chilli Coated Burner 300g — $20. Rolled in chilli. Heat on the outside, cured sausage underneath.
• Chilli Coated Mettwurst 400g — $22. Same idea, mettwurst underneath.
• Chilli Coated Burner (twin pack) — $16. Two smaller ones.
• Artisan Game Venison Mettwurst 400g — $23. Rich, refined, and the one to buy if you already know mettwurst well.

Cured the old way

These are cured sausages, and the cure is what makes them what they are — salt, ferment, smoke, time, and a curing salt, the same one charcuterie makers have used for generations and the same one that keeps cured meat safe to eat.

It’s on the label, where it belongs. What we will tell you is what isn’t in them:
