Artisan Game — native and exotic Australian meats

Australia has some of the leanest, cleanest protein on earth walking around in it — kangaroo, emu, saltwater crocodile, venison, wild boar — and almost nobody was doing anything serious with it. So we did.

Artisan Game is our range of native and exotic meats, made with German charcuterie technique. Naturally woodsmoked, cured properly, and made by a family that has been doing this since 2005.

Product of Australia

Every Artisan Game pack carries it: Product of Australia. Not “made in Australia from imported ingredients”, not “packed in Australia”. The animal, the marinade and the making are all from here.

The clean-label range

This is the one part of our shelf we hold to a stricter standard than the rest, and we’re specific about it:

• No nitrites
• No preservatives
• No MSG
• No phosphates
• No additives
• No artificial flavours

Our traditional German smallgoods — the mettwurst, the salami, the biersticks — are cured the old way, with a curing salt, as they have been for generations. Artisan Game is the other thing entirely. Both are honest. They just do different jobs.

Why game meat

• Kangaroo — less than 2% fat, double the iron of beef. Sustainably wild-harvested, not farmed.
• Emu — higher in iron than beef, low in saturated fat, rich in B vitamins and omega-3s.
• Crocodile — one of the leanest meats available anywhere. Extremely low in fat and cholesterol.

None of it is imported. All of it is Australian.
