What crocodile jerky tastes like

Mild. Genuinely mild — this is the least gamey thing in our range, and it catches people off guard.

Crocodile is clean and delicate, somewhere between a firm white fish and a lean chicken but denser than either. It doesn’t fight you. Which is exactly why the bush plum works so well against it: Davidson plum is sharply tart, almost sour, and it cuts across the mildness of the meat and gives it a lift that no chilli or pepper blend could.

About the bush plum

Davidson plum is a wild-harvested Australian native fruit — deep purple, intensely tart, and used by Aboriginal peoples for thousands of years. It’s not a plum in the European sense at all.

We use it because it’s the right ingredient, not because it’s a talking point. Crocodile needs acidity the way a good fish needs lemon, and bush plum brings it in a way that belongs in this country.

Why crocodile

It’s one of the leanest meats available anywhere. Extremely low in fat and cholesterol, exceptionally high in protein. If you’re eating jerky as a protein snack rather than as a treat, this is the most efficient version of it we sell.

It’s sustainably farmed. Australian saltwater crocodile, farmed under strict Australian standards.

It’s not imported. None of our range is.

Is crocodile jerky just a novelty?

Not the way we make it. It’s one of the leanest, highest-protein meats available, and the native bush plum marinade is a genuine flavour pairing rather than a gimmick. Plenty of crocodile jerky is a novelty — that’s why we make ours properly.
